- 450 g (1 pound) diced chicken breast
- 1 medium onion, diced
- 1 red pepper, sliced
- 4 garlic cloves, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons curry powder
- 200 ml (1 cup) chicken stock
- 2 kaffir lime leaves
- 400 ml (2 cups) full-fat coconut milk
- 1 large mango, diced (about 250 g or 9 oz)
- Fresh coriander leaves for garnish
Instructions
- Heat olive oil and butter in a large deep pan over medium heat until melted.
- Add diced chicken and cook for 4-5 minutes until golden, then set aside.
- In the same pan, sauté diced onion and sliced red pepper for 2-3 minutes until softened.
- Stir in minced garlic and grated ginger; cook for another minute until fragrant.
- Add curry powder, chicken stock, and kaffir lime leaves, stirring well.
- Bring to a simmer; mix in coconut milk, diced mango, and cooked chicken. Simmer for about 10 minutes until thickened.
- Serve hot over basmati or cauliflower rice, garnished with fresh coriander.
