Ingredients
- 16 ounces firm tofu
- 2 tablespoons olive oil
- 3 cloves garlic (grated)
- 1½ inches ginger (grated)
- ¾ cup dried shiitake mushrooms
- 8 ounces fresh mushrooms (chopped)
- 6 cups vegetable broth
- 1 cup broccoli florets
- ¾ cup frozen peas
- Optional: Miso paste, noodles, scallions, cilantro
Instructions
- Soak the dried shiitake mushrooms in hot water for 5 minutes. Heat olive oil in a large pot over medium heat.
- Sauté grated garlic, ginger, and sliced chili for 1 minute. Add soaked mushrooms (drained) and fresh chopped mushrooms; cook for 5 minutes.
- Pour in the vegetable broth and reserved mushroom soaking water (strained). Bring to a boil and add diced tofu, broccoli florets, and peas.
- Simmer for 10-15 minutes until veggies are tender but crisp.
- Adjust seasoning to taste; stir in optional miso before serving.
- Serve hot, garnished with scallions and cilantro.
