Instructions

  1. Preheat your oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. Beat eggs and granulated sugar until fluffy; add vanilla. In another bowl, sift together flour, cocoa powder, baking powder, and salt. Fold dry ingredients into egg mixture until combined.
  3. Spread batter evenly on the pan and bake for about 10 minutes until springy.
  4. Turn cake onto a powdered sugar-dusted kitchen towel and roll tightly while warm; cool completely.
  5. Whip heavy cream with powdered sugar and vanilla until stiff peaks form; fold in cherries.
  6. Unroll the cake gently, spread filling evenly, then roll again without the towel.
  7. For ganache, heat heavy cream until simmering; pour over chopped chocolate and butter; stir until smooth.
