  • 2 (14-ounce) cans black beans
  • 1 tablespoon avocado oil
  • 1 cup yellow onion, finely chopped
  • 1 jalapeño, seeded and chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ¼ teaspoon black pepper
  • 1 teaspoon salt
  • ½ cup breadcrumbs
  • ½ cup walnuts
  • 2 cups cotija cheese (or feta)
  • 2 large eggs
  • 1 tablespoon mayonnaise
  • 1 tablespoon barbecue sauce

Instructions

  1. Preheat oven to 325°F (165°C). Spread drained black beans on a parchment-lined baking sheet and bake for 15 minutes.
  2. Increase oven temperature to 375°F (190°C). In a food processor, blend walnuts until semi-fine.
  3. Sauté onions, jalapeños, and garlic in avocado oil over medium heat until softened. Drain excess oil.
  4. Combine sautéed vegetables with walnuts and all spices in the food processor. Pulse until just mixed. Add black beans and pulse again until some beans remain chunky.
  5. Shape the mixture into patties and place on a parchment-lined baking sheet.
  6. Bake for 10 minutes per side or pan-fry in an oiled skillet until golden brown.
