  • 3/4 lb top sirloin cubes
  • 2 cups apple cider
  • 1/2 cup beef broth
  • 1 large onion (chopped)
  • 2 medium carrots (peeled and chopped)
  • 6 large potatoes
  • 1/4 cup milk
  • 1/4 cup sour cream
  • 1 cup sharp cheddar cheese (shredded)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a Dutch oven, heat butter and olive oil over medium-high heat. Brown the seasoned sirloin cubes for 6-8 minutes.
  3. Add chopped onion and carrots; cook for an additional 4-5 minutes.
  4. Sprinkle flour over the mixture, add apple cider and beef broth, bring to a boil.
  5. Cover and bake in the oven for 1 – 1½ hours until tender.
  6. Meanwhile, boil peeled potatoes in salted water until tender (15-20 minutes), then mash with milk, sour cream, cheese, and chives.
  7. Serve stew generously over warm mashed potatoes.
