Ingredients
- 3/4 lb top sirloin cubes
- 2 cups apple cider
- 1/2 cup beef broth
- 1 large onion (chopped)
- 2 medium carrots (peeled and chopped)
- 6 large potatoes
- 1/4 cup milk
- 1/4 cup sour cream
- 1 cup sharp cheddar cheese (shredded)
Instructions
- Preheat oven to 375°F (190°C).
- In a Dutch oven, heat butter and olive oil over medium-high heat. Brown the seasoned sirloin cubes for 6-8 minutes.
- Add chopped onion and carrots; cook for an additional 4-5 minutes.
- Sprinkle flour over the mixture, add apple cider and beef broth, bring to a boil.
- Cover and bake in the oven for 1 – 1½ hours until tender.
- Meanwhile, boil peeled potatoes in salted water until tender (15-20 minutes), then mash with milk, sour cream, cheese, and chives.
- Serve stew generously over warm mashed potatoes.
