  • 175 g dried apricots
  • 3 tablespoons brandy
  • 175 g butter
  • 175 g light brown sugar
  • 4 large eggs
  • 175 g plain flour
  • 225 g raisins
  • 225 g currants
  • 225 g cherries
  • 1 tablespoon apricot jam
  • 500 g marzipan
  • 500 g ready-to-roll fondant
  • 30 ml brandy

Instructions

  1. Preheat the oven to 160°C (320°F).
  2. Soak chopped dried apricots, raisins, currants, cherries, and brandy in a bowl for at least 30 minutes.
  3. Cream softened butter and light brown sugar until fluffy. Gradually add beaten eggs.
  4. Gently fold in plain flour followed by soaked fruit mixture until evenly combined.
  5. Pour into a greased baking tray and bake for about 1 hour or until a skewer comes out clean.
  6. Cool completely before brushing with extra brandy; spread warmed apricot jam and layer marzipan and fondant on top.
