  • 1 1/4 cups buttermilk, room temperature
  • 2/3 cup vegetable or canola oil
  • 2 squirts of green gel food coloring (or 1 Tbsp liquid food coloring)
  • 2 tsp vanilla extract or vanilla bean paste
  • 1 tsp white vinegar
  • 1 1/2 cups unsalted butter, room temperature (for frosting)
  • 1/2 cup full-fat cream cheese, room temperature
  • 1 Tbsp vanilla extract or vanilla bean paste (for frosting)
  • 1 tsp fine salt (for frosting)
  • 8 cups powdered sugar
  • 2 Tbsp heavy whipping cream, room temperature
  • Electric green gel food coloring (for decoration)
  • Black gel food coloring (for decoration)

Instructions

  1. Preheat oven to 350°F (175°C) and prepare two round cake pans with grease and parchment paper.
  2. Whisk together cake flour, cocoa powder, baking soda, and salt in a medium bowl.
  3. In a large mixing bowl, cream unsalted butter until smooth, then gradually add sugar until fluffy.
  4. Add eggs one at a time, followed by buttermilk, oil, food coloring, vanilla extract, and vinegar. Mix well.
  5. Fold dry ingredients into the wet mixture until just combined; do not overmix.
  6. Divide batter between prepared pans and bake for about 28 minutes or until a toothpick comes out clean.
  7. Cool cakes in pans for 10 minutes before transferring to wire racks to cool completely.
  8. For the frosting, beat unsalted butter until smooth, add cream cheese and mix well. Gradually incorporate powdered sugar and whip in heavy cream to achieve desired consistency.
  9. Assemble the cake by layering with buttercream between the cooled cakes and frosting the outside.
  10. Decorate creatively using colored gels to create Frankenstein's face.
