  • 4 tablespoons salted butter
  • 46 slices hearty white bread
  • 3 cups shredded Gruyere cheese
  • 1 can beef broth (14.5 oz)
  • 1/3 cup sherry wine
  • 1 teaspoon sugar
  • 2 tablespoons all-purpose flour
  • 1/2 teaspoon dried thyme leaves
  • 1/4 teaspoon pepper

Instructions

  1. Caramelize the onions: Melt butter in a Dutch oven over medium heat. Add sliced onions and sugar; cook slowly for about 35 minutes until deeply caramelized. Season with salt.
  2. Prepare the dipping broth: In the same pot, melt additional butter, whisk in flour, then add thyme, sherry wine, beef broth, and pepper. Heat until slightly thickened.
  3. Assemble the sandwich: Butter both sides of bread slices. In a skillet over medium heat, toast one side of each slice until golden. Flip and layer with onions and Gruyere cheese; top with another slice of bread.
