  • 1 Pâte Sucrée dough recipe (sweet shortcrust pastry)
  • 2 cups fresh strawberries, chopped
  • 1 tablespoon granulated sugar
  • 1 (14 oz) can sweetened condensed milk
  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 egg yolks
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 6 fresh strawberries, halved

Instructions

  1. Prepare the tartlet shells by pressing chilled Pâte Sucrée dough into tartlet pans. Freeze for 15–30 minutes.
  2. Preheat the oven to 375°F. Prick the frozen shells with a fork and bake for 10–15 minutes until edges are golden.
  3. For the strawberry jam, cook chopped strawberries with sugar in a saucepan over medium heat for about 5 minutes, then simmer on low for about 20 minutes until thickened.
  4. In another saucepan, heat sweetened condensed milk, whole milk, and heavy cream until simmering. Whisk egg yolks and cornstarch together; temper yolks with hot milk mixture before returning to the pan. Cook until thickened and refrigerate for at least 2 hours.
  5. Assemble by spreading jam in each cooled tartlet shell, piping pastry cream on top, and garnishing with halved strawberries.
