- 1 pie crust (homemade or store-bought)
- 3 pounds fresh strawberries, hulled and divided
- 1/2 cup water
- 3/4 cup sugar
- 2 tablespoons cornstarch
- 3 tablespoons strawberry vegan gelatin (powdered Jell-O)
- 2 teaspoons lemon juice
- 1 cup cold heavy whipping cream
- 3 tablespoons powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven according to pie crust instructions.
- In a saucepan over medium heat, mix water, sugar, cornstarch, and salt until dissolved. Add strawberry gelatin and whisk until thickened. Remove from heat and stir in lemon juice; let cool slightly.
