  • 40 g icing sugar
  • 1 large egg
  • 225 g plain flour
  • 3 ½ cups whole milk
  • 57 g butter (for custard)
  • 3 teaspoons vanilla extract
  • 100 g granulated sugar
  • ½ cup cornflour
  • 2 large eggs (for custard)
  • 3 egg yolks
  • 3 cups mixed berries (strawberries, raspberries, blueberries)

Instructions

  1. Prepare the shortcrust pastry by creaming butter and icing sugar in a stand mixer. Add egg and gradually mix in flour until clumps form.
  2. Roll out the dough to about 11 inches in diameter and place it in a greased tart pan. Chill for at least two hours.
  3. Preheat oven to 350°F (180°C). Bake the tart shell for about 35 minutes until golden brown.
  4. For the custard, heat milk, butter, sugar, and vanilla in a saucepan. Whisk cornflour, eggs, and yolks together; slowly add hot milk mixture while whisking.
  5. Return to the heat and stir until thickened. Pour into the cooled tart shell and chill for three hours.
  6. Top with fresh berries before serving.
