  • 1 medium yellow onion
  • 1 teaspoon dried chili flakes (adjust to taste)
  • 2-inch piece fresh ginger
  • 3 cloves garlic
  • 1 ½ lbs sweet potatoes
  • ½ cup dry brown lentils
  • 4 cups vegetable stock
  • 13.5 oz full-fat coconut milk
  • 1 bunch kale

Instructions

  1. In a large pot over medium heat, melt coconut oil and sauté diced onion until translucent. Add chili flakes, ginger, garlic, coriander, cumin, turmeric; cook until fragrant.
  2. Stir in sweet potatoes and lentils; season with salt and pepper. Pour in vegetable stock and bring to a boil.
  3. Reduce heat and simmer for about 30 minutes until sweet potatoes are tender.
  4. Stir in coconut milk and chopped kale; cover and simmer for an additional 3-4 minutes.
