  • 1/2 cup unsalted butter (softened) for the cream filling
  • 4 ounces cream cheese (brick style, full fat)
  • 1 1/22 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract for the cream filling
  • 1/4 teaspoon salt for the cream filling
  • 1 tablespoon whipping cream (if needed, half and half works too)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In one bowl, whisk together flour, ginger powder, cinnamon, nutmeg, cloves, baking soda, and salt.
  3. In another bowl, beat together softened butter, brown sugar, and granulated sugar until light and fluffy.
  4. Mix in molasses, vanilla extract, and egg until well combined.
  5. Gradually add dry ingredients to wet mixture; stir in rolled oats.
  6. Scoop tablespoon-sized portions onto prepared baking sheets; bake for about 9 minutes until edges are set but centers remain soft.
  7. Allow cookies to cool on the sheet before transferring to wire racks.
  8. For the filling, beat softened butter and cream cheese until smooth; gradually mix in powdered sugar until desired sweetness is reached.
  9. Assemble by spreading or piping cream filling between two cooled cookies.
