  • ½ cup unflavored collagen peptides
  • 1 can pumpkin puree (15oz)
  • 2 large eggs
  • ½ cup coconut sugar
  • ¼ cup avocado oil
  • 1 cup paleo chocolate chips

Instructions

  1. Preheat your oven to 375°F (190°C) and line a muffin tin with liners.
  2. In one bowl, whisk together dry ingredients: gluten-free flour, collagen peptides, pumpkin pie spice, baking powder, baking soda, and salt.
  3. In another bowl, mix wet ingredients: pumpkin puree, eggs, coconut sugar, avocado oil, and vanilla extract until smooth.
  4. Combine dry ingredients into wet ingredients gently until just mixed; avoid over-mixing.
  5. Fold in chocolate chips and let the batter rest for about 15 minutes.
