  • 1 large egg
  • ½ cup breadcrumbs
  • ⅓ cup crumbled feta cheese
  • 2 tablespoons olive oil
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • Juice and zest of 2 lemons
  • Fresh parsley and dill

Instructions

  1. In a mixing bowl, combine ground chicken, egg, breadcrumbs, feta cheese, parsley, oregano, minced garlic, lemon zest, salt, and pepper. Mix until just combined.
  2. Form the mixture into small meatballs (about 1 inch in diameter) and place on a parchment-lined baking sheet.

  4. Transfer meatballs back to the baking sheet and bake in a preheated oven at 400°F (200°C) for about 15 minutes until cooked through.

  6. Drain orzo if necessary; stir in butter (or olive oil), lemon juice, remaining lemon zest, and minced garlic. Season with salt and pepper.
