  • 1 lb. raw jumbo shrimp (peeled and deveined)
  • 1/2 c. vegetable oil
  • 1/2 habanero pepper (seeded and minced)
  • 3 garlic cloves (chopped)
  • 1 T. minced fresh ginger
  • 1 T. brown sugar
  • 2 tsp. smoked paprika
  • 1 tsp. chili powder
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1 tsp. Mexican oregano
  • 1 tsp. kosher salt
  • 1/2 tsp. black pepper
  • 1/4 tsp. cinnamon
  • 1/4 tsp. nutmeg
  • 1/4 tsp. allspice
  • Optional garnishes: chopped cilantro, lime wedges

Instructions

  1. Prepare the marinade by combining all ingredients in a bowl and blending until smooth. Pour over shrimp and refrigerate for 2 to 3 hours.
  2. Preheat your grill to medium-high heat (about 475°F).
  3. For grilling on a plank: Soak the plank in beer for at least 2 hours before grilling. Place shrimp on the heated plank and grill each side for about 5 to 6 minutes until opaque.
  4. For grilling on grates: Oil the grill grates well and place shrimp directly on them. Grill each side for about 3 to 4 minutes until charred and cooked through.
  5. Serve garnished with cilantro and lime wedges.
