  • 2 ears of corn (shucked and sliced)
  • 2 cajun-style sausage links
  • 1 lb large raw shrimp (peeled and deveined)
  • 6 Tbsp butter
  • 2 Tbsp fresh lemon juice
  • 2 cloves garlic (minced)
  • Old Bay seasoning

Instructions

  1. Preheat grill to medium-high heat (425°F). Cut eight sheets of aluminum foil (12×14 inches).
  2. Microwave potatoes for 3 minutes until slightly softened; slice.
  3. Divide sliced potatoes among foil sheets, layering with corn, sausage slices, and shrimp.
  4. Melt butter with lemon juice and garlic; drizzle over each packet.
  5. Season with Old Bay seasoning, seal the packets tightly, then grill for 12-15 minutes or until shrimp is cooked through and potatoes are tender.
  6. Serve warm garnished with fresh parsley.
