  • 1 pound carrots (halved or quartered)
  • 1 pound asparagus (trimmed)
  • 2 zucchini (cut into sixths)
  • 2 yellow squash (cut into sixths)
  • 1 large red bell pepper (cut into ½ inch strips)

Instructions

  1. In a mixing bowl, whisk together olive oil, balsamic vinegar, dijon mustard, honey, thyme, garlic powder, salt, and black pepper until well combined.
  2. Place the chopped vegetables in a large bowl or zip-top bag and pour the marinade over them. Toss to coat evenly.
  3. Let the vegetables marinate for at least 30 minutes at room temperature or up to 4 hours in the refrigerator.
  4. Preheat your grill to medium-high heat (about 400°F).
  5. Grill the marinated veggies for 10-12 minutes, turning occasionally until tender and slightly charred.
