  • 8 flour tortillas
  • 720ml chicken stock
  • 3 tbsp vegetable oil
  • 200g cheddar cheese
  • Diced vegetables (onion, red pepper, garlic)
  • Homemade enchilada sauce (including chili powder, cumin, oregano)

Instructions

  1. Heat oil in a frying pan and prepare the sauce by whisking together flour and tomato puree before adding chicken stock and seasonings. Simmer until thickened.
