Ingredients
- 1 cup cooked quinoa
- 1 lb lean ground beef
- 6 zucchinis, sliced
- 1 cup cottage cheese
- 2 cups low sugar tomato sauce
- 3 cloves garlic, minced
- 2 cups shredded mozzarella cheese
Instructions
- Preheat the oven to 375°F and grease a 9×13 inch casserole dish.
- Cook quinoa according to package instructions.
- In a large pan, heat olive oil over medium-high heat. Add ground beef, garlic, and onions; cook until meat is browned and onions are translucent. Drain excess fat.
- In the same pan, sauté zucchini with remaining olive oil until softened (about 5 minutes).
- Combine cooked beef, zucchini, cooked quinoa, tomato sauce, cottage cheese, and half of the mozzarella in the casserole dish; mix well.
- Top with remaining mozzarella and bake for about 30 minutes. Broil for an additional 5 minutes to brown the cheese if desired.
- Let rest for 10 minutes before serving.
