  • 4 slices thick-cut bacon

  • 2 ½ cups Guinness beer
  • 2 ½ cups beef broth
  • 1 pound carrots
  • 1 ½ pounds Yukon Gold potatoes
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a Dutch oven, heat vegetable oil over medium-high heat. Cook diced bacon until crispy, then remove and set aside.
  2. Season beef with salt and pepper; brown in batches in the same pot. Remove and reserve with bacon.
  3. Sauté sliced onions until golden; add minced garlic and cook until fragrant.
  4. Stir in tomato paste and flour; cook briefly before adding Guinness, scraping up browned bits.
  5. Combine remaining ingredients—beef broth, Worcestershire sauce, sugar—return beef and bacon to pot, and bring to a boil.
  6. Cover and simmer on low for one hour; add carrots and potatoes, then cook until beef is tender (about one more hour).
  7. Adjust thickness if necessary; serve hot garnished with parsley.
