Instructions
- Prepare the praline by melting butter, caster sugar, honey, and cream in a saucepan until golden. Stir in roasted hazelnuts and let set.
- Process the hardened praline into coarse crumbs.
- Make ganache by melting dark chocolate with heated cream and butter; mix in praline crumbs and chill until firm.
- Roll ganache into balls and freeze briefly.
- Dip truffles in melted dark chocolate and coat with extra praline crumbs; let set.
