Ingredients

  • 175g dried figs
  • 36 tbsp water
  • 125g ground oats or oat flour
  • 50g ground almonds
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 2 tbsp maple syrup (or other liquid sweetener)
  • 50g coconut oil (or butter)

Instructions

  1. Preheat your oven to 180C/350F.
  2. In a large pan, combine the dried figs and water; cook over medium heat for about 10 minutes until softened, then mash into a paste.
  3. In a large bowl, mix ground oats, ground almonds, cinnamon, and salt. Stir in the maple syrup and melted coconut oil until well combined.
  4. Chill the dough in the fridge for 30 minutes.
  5. Roll out the dough into a square between two sheets of parchment paper; cut into two long pieces.
  6. Spread fig mixture onto each piece and roll tightly into cylinders; freeze for 15-30 minutes before slicing.
  7. Bake on a lined tray for 15-20 minutes or until golden.
