- 1 cup broccoli florets
- 1/2 cup shredded carrots
- 1/2 cup plain Greek yogurt or sour cream
- 1/2 cup shredded mozzarella
- 1/2 cup shredded cheddar
- 1/4 cup grated Parmesan
- Olive oil for sautéing
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×13-inch casserole dish.
- In a large skillet, heat olive oil over medium heat. Sauté the onion for about 3–4 minutes until soft. Add garlic, broccoli, and carrots; cook for an additional 5–6 minutes until tender.
