  • 1 small onion (diced)
  • 2 cloves garlic (minced)
  • 1 cup broccoli florets
  • 1/2 cup shredded carrots
  • 1/2 cup plain Greek yogurt or sour cream
  • 1/2 cup shredded mozzarella
  • 1/2 cup shredded cheddar
  • 1/4 cup grated Parmesan
  • Olive oil for sautéing

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch casserole dish.
  2. In a large skillet, heat olive oil over medium heat. Sauté the onion for about 3–4 minutes until soft. Add garlic, broccoli, and carrots; cook for an additional 5–6 minutes until tender.
  3. In a mixing bowl, combine cauliflower rice, cooked chicken, sautéed veggies, Greek yogurt (or sour cream), mozzarella, cheddar, Parmesan, thyme, paprika, salt, and pepper. Mix until well combined.
  4. Transfer the mixture to the prepared casserole dish and spread evenly. Top with extra cheese if desired. Bake uncovered for 25–30 minutes until hot and bubbly.
  5. Let it cool slightly before serving. Garnish with fresh parsley or lemon juice for added flavor.
