  • 3 tbsp olive oil
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh rosemary, chopped
  • 4 large potatoes, peeled and cubed
  • 1/2 cup heavy cream
  • 1 bunch asparagus, trimmed
  • Salt and pepper to taste

Instructions

  3. Heat skillet over medium-high heat; sear lamb chops for 2 minutes on each side until browned.

  5. Boil cubed potatoes in salted water until tender (about 15 minutes). Drain, then mash with butter, heavy cream, and salt until smooth.
  6. Toss asparagus with olive oil, salt, and pepper; roast in the oven for 12–15 minutes or until tender.
  7. Serve lamb chops over mashed potatoes with roasted asparagus on the side.
