  • 500g carrots
  • 240g drained cooked chickpeas
  • 300g Greek yogurt
  • 150g feta cheese
  • 2 tablespoons honey
  • 2 tablespoons rose harissa paste
  • Olive oil

Instructions

  1. Preheat your oven to 190°C.
  2. Trim carrot tops, toss carrots with olive oil, cinnamon, salt, and pepper in a roasting tray. Roast for 30 minutes.
  3. Chop carrot tops and mix with lemon juice and olive oil to make a green sauce.
  4. Whip Greek yogurt and crumbled feta until smooth; season with salt and pepper.
  5. After 30 minutes, add drained chickpeas to the roasting tray and cook for an additional 15 minutes until crisp.
  6. Mix honey and harissa in a bowl; coat roasted carrots and chickpeas with this mixture.
  7. Serve whipped feta on a plate topped with roasted carrots and chickpeas.
