  • 1 pound raw medium-sized shrimp (peeled and deveined)
  • 3 tablespoons olive oil
  • 3 tablespoons honey
  • 5 tablespoons lime juice
  • 1 head butter lettuce (or 5 cups lettuce of choice)
  • 1 cup cherry tomatoes (halved)
  • 1 avocado (peeled and sliced)
  • 1/2 cup fresh or defrosted frozen corn
  • 1/3 cup crumbled queso fresco
  • Cilantro for garnish

Instructions

  1. In a small bowl, whisk together olive oil, honey, lime juice, chili powder, cumin, garlic powder, salt, and pepper to create the marinade.
  2. Pat the shrimp dry and toss them in 3 tablespoons of the marinade. Let marinate for 15-30 minutes.
  3. Arrange butter lettuce on a serving platter and top with corn, tomatoes, avocado, and queso fresco.
  4. Heat a skillet over medium-high heat with olive oil. Cook marinated shrimp for about 2 minutes on each side until opaque.
  5. Place cooked shrimp on top of the salad, drizzle with remaining marinade, and garnish with cilantro.
