  • 12 duck eggs
  • 8 chicken eggs
  • 34 garlic cloves, smashed
  • 12 tbsp crushed red pepper flakes
  • 23 fresh jalapeños, sliced
  • 1 sweet red pepper, chopped
  • 2 cups white vinegar
  • 2 cups water
  • 2 tbsp sugar
  • 1 tbsp salt
  • Optional: 1 tsp black peppercorns
  • Optional: fresh herbs (dill or thyme)

Instructions

  1. Boil duck and chicken eggs until hard-cooked (9–12 minutes). Transfer to an ice bath, then peel when cooled.
  2. In a saucepan, combine vinegar, water, sugar, salt, and optional peppercorns. Bring to a boil to dissolve ingredients; cool slightly.
  3. In clean glass jars, place smashed garlic cloves, crushed red pepper flakes, sliced jalapeños, and chopped sweet red pepper. Gently add peeled eggs.
  4. Pour warm brine over the eggs until fully submerged; seal jars tightly.
  5. Refrigerate for at least 3 days (preferably one week) before enjoying.
