Ingredients
- 2 1/2 lb ripe peaches (about 6–7 large)
- 1/2 cup sugar (plus extra for sprinkling)
- 2 tbsp cornstarch
- 1/2 tsp grated orange zest
- 1/4 cup freshly squeezed orange juice
- 12 tbsp very cold butter (for crust)
- 3 cups all-purpose flour (for crust)
- 1 tbsp sugar (for crust)
- 1 egg (beaten with water for egg wash)
Instructions
- Prepare the pie crust by mixing flour, salt, and sugar in a food processor. Add cold butter and shortening until pea-sized pieces form, then add ice water to form dough. Chill for at least 30 minutes.
- Roll out half of the dough into a circle larger than your pie dish and place it in the dish. Trim excess dough.
- For the filling, peel and slice peaches, then combine with sugar, cornstarch, orange zest, orange juice, and butter in a saucepan over medium heat until boiling.
- Pour the peach mixture into the prepared crust. Roll out remaining dough for lattice topping and place over filling.
- Brush with egg wash, sprinkle with sugar, and bake at 400°F for about 45 minutes until golden brown.
- Allow to cool before serving.
