  • 1 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup butter, melted
  • 2 cups cream cheese, softened
  • 1/2 cup sour cream
  • 3/4 cup erythritol (or preferred keto sweetener)
  • 1 tsp mint extract
  • 1 cup heavy whipping cream (for topping)

Instructions

  1. Preheat the oven to 325°F (163°C) and prepare a muffin tin with cupcake liners.
  2. In a bowl, mix almond flour, cocoa powder, melted butter, and erythritol until crumbly. Press into the bottom of each liner.
  3. In another bowl, beat cream cheese and sour cream until smooth. Add erythritol and mint extract; mix well.
  4. Spoon the filling over the crusts evenly and smooth the tops.
  5. Bake for 20-25 minutes until slightly jiggly in the center. Cool at room temperature before refrigerating for at least two hours.
  6. Serve chilled topped with whipped cream.
