  • 2 tablespoons olive oil
  • 3 pounds beef stew meat (or lamb)
  • 1/4 cup all-purpose flour
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 teaspoons fresh rosemary
  • 1 teaspoon dried thyme
  • 4 cups beef broth
  • 5 carrots, peeled and cut into chunks
  • 1 cup frozen peas
  • 2 bay leaves
  • Mashed potatoes for serving

Instructions

  1. Heat olive oil in a Dutch oven over medium-high heat.
  2. In a Ziploc bag, mix stew meat with flour, salt, pepper, garlic powder, onion powder, rosemary, and thyme. Shake well to coat.
  3. Sear the coated meat in the hot oil until browned on all sides.
  4. Slowly stir in beef broth to combine with the meat.
  5. Add carrots and bay leaves; bring to a boil.
  6. Reduce heat to medium-low and cover; simmer for about 45 minutes.
  7. Five minutes before serving, add frozen peas.
  8. Discard bay leaves and serve warm alongside fluffy mashed potatoes.
