Ingredients

  • 200g block of feta cheese
  • 4 large eggs
  • 250g cherry tomatoes, halved
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Fresh basil or parsley, for garnish

Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a baking dish.
  2. Place the block of feta in the center of the dish and surround it with halved cherry tomatoes. Drizzle with olive oil and season with salt and pepper.
  3. Bake for 20 minutes until the feta is soft and slightly golden.
  4. Remove from oven and create small wells among the tomatoes and feta; crack an egg into each well.
  5. Return to oven for an additional 10-12 minutes or until eggs are set to your preference.
  6. Garnish with fresh herbs before serving warm.
