  • 1 cup whole milk ricotta cheese
  • 1/2 cup powdered sugar
  • 1/4 cup mini chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract; mix well.
  3. In another bowl, whisk together flour and baking powder. Gradually add this mixture into the wet ingredients until fully combined.
  4. Scoop tablespoon-sized portions of dough onto the prepared baking sheet, flattening them slightly.
  5. Bake for 12-15 minutes until edges are lightly golden. Allow to cool completely.
  6. Meanwhile, mix ricotta cheese with powdered sugar and chocolate chips until smooth. Once cookies are cooled, pipe or spread filling between two cookies.
