- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1 red bell pepper, sliced
- 3 tbsp lime juice (freshly squeezed)
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
- 1 tsp garlic powder
- 1 tsp ground cumin
Instructions
- Marinate the chicken by mixing lime juice, olive oil, garlic powder, cumin, salt, and pepper in a bowl. Add chicken and let it marinate for at least 15 minutes.
- Preheat the grill to medium-high heat (about 400°F). Clean and lightly oil the grates.
- Grill the chicken for about 6-7 minutes on each side until it reaches an internal temperature of 165°F. Remove from the grill and let rest for five minutes before slicing.
- While the chicken rests, prepare the vegetables by chopping mixed greens, slicing cucumbers and bell peppers, and halving cherry tomatoes in a large salad bowl.
- Add sliced chicken to the bowl with veggies. Drizzle with remaining lime juice and olive oil; toss gently to combine.
