  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 2 tsp ground cumin
  • 1 tsp ground cinnamon
  • 1/4 cup olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup unsweetened dried apricots, sliced

Instructions

  1. In a large bowl, mix minced garlic, cumin, cinnamon, olive oil, salt, and pepper.
  2. Add chicken breasts and coat thoroughly with marinade. Cover and refrigerate for at least 30 minutes or overnight for deeper flavor.
  3. Preheat the grill to medium-high heat (375°F or 190°C) and lightly oil the grates.
  4. Grill chicken for about 6-8 minutes on each side until an internal temperature of 165°F (75°C) is reached.
  5. In the last few minutes of grilling, place sliced apricots on top of each chicken breast to warm them.
  6. Remove from grill and let rest for five minutes before serving.
