  • 1 yellow or white onion, roughly chopped
  • 2 carrots, roughly chopped
  • 2 celery sticks, roughly chopped
  • 6 cups chicken or vegetable broth
  • 1 Parmesan rind
  • 1 cup pastina pasta (or other small pasta)
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Roughly chop the onion, carrots, and celery.
  2. In a large pot, combine the chopped vegetables with broth and Parmesan rind; bring to a boil.
  3. Reduce heat, cover, and simmer for 15-18 minutes until vegetables are tender.
  4. Use a strainer to remove the veggies; blend them with about ½ cup of broth until smooth.
  5. Return the puree to the pot; add pastina and simmer for another 7-9 minutes until pasta is cooked.
  6. Season with grated Parmesan cheese, salt, and pepper; serve garnished with fresh parsley.
