  • 1 teaspoon smoked chili flakes
  • 3 garlic cloves
  • 1 teaspoon salt
  • 1/3 cup sundried tomatoes, diced
  • 2/3 cup panko breadcrumbs
  • 1/3 cup minced parsley
  • Kosher salt and black pepper to taste

Instructions

  1. Bring the lamb belly to room temperature for at least one hour. Trim excess fat but retain some for moisture.
  2. Mix oregano, fennel, rosemary, chili flakes, garlic, and salt in a mortar or food processor until combined. Add this mixture to panko, sundried tomatoes, and parsley.
  3. Lay out lamb belly pieces on a cutting board. Spread the herb mixture evenly over each piece, roll tightly from wide to narrow end, and secure with kitchen twine.
  4. For stovetop/oven method: Brown rolls in a heavy frying pan over medium-low heat; then transfer to a preheated oven at 350°F until internal temperature reaches 130°F. Let rest for 5 minutes before serving.
  5. For grilling: Preheat grill to 425°F; brown all sides of the rolls on the grill until reaching an internal temperature of 130°F, followed by resting.
