  • 2 tablespoons vegetable oil
  • 8 tablespoons key lime juice (810 key limes)
  • 5 egg whites, room temperature
  • 2 cups graham cracker crumbs
  • 2 tablespoons sugar
  • ½ cup (1 stick) butter, melted and slightly cooled
  • 1.5 cups (3 sticks) unsalted butter, softened
  • 1 cup shortening
  • 1/4 teaspoon salt
  • 68 cups powdered sugar
  • 3 tablespoons key lime juice (34 key limes)
  • ¼ cup sweetened condensed milk
  • 12 tablespoons hot water
  • Green food coloring gel
  • 12 cups heavy whipping cream, cold
  • 1 tablespoon sugar
  • Lime slices for garnish

Instructions

  1. Preheat oven to 350°F (175°C) and grease three 8-inch round cake pans.
  2. In a stand mixer, cream together butter and sugar until light and fluffy. Add egg whites one at a time.
  3. Mix in sour cream, milk, vegetable oil, vanilla extract, and key lime juice.
  4. In another bowl, whisk together flour, baking powder, baking soda, and salt; gradually combine with the wet mixture.
  5. Pour batter into prepared pans and bake for about 20 minutes or until a toothpick comes out clean.
  6. For the graham cracker crumble, mix crumbs and sugar with melted butter until crumbly.
  7. Prepare the key lime buttercream by beating softened butter and gradually adding powdered sugar along with key lime juice until desired consistency is achieved.
  8. Assemble layers of cake with graham cracker crumble between them and frost with key lime buttercream.
