  • 1 pound chicken breast
  • 2 tablespoons low sodium tamari (or soy sauce)
  • 1 tablespoon honey
  • 1 tablespoon chili paste
  • 1 tablespoon toasted sesame oil
  • 1/2 cup diced green onion
  • 1 tablespoon minced garlic
  • 1/2 cup low sodium tamari (or soy sauce)
  • 1 tablespoon peanut butter
  • 2 tablespoons rice vinegar
  • Crushed peanuts for garnish

Instructions

  1. Cut chicken into small pieces and marinate with tamari, honey, and chili paste for at least 30 minutes.
  2. Cook noodles as per package instructions; drain and set aside.
  3. Whisk together sauce ingredients in a bowl.
  4. Sauté green onion in sesame oil, then add garlic.
  5. Fry marinated chicken until cooked through.
  6. Combine the sauce with the chicken in the skillet, adding cornstarch mixed with water to thicken.
  7. Toss noodles into the mixture until fully combined.
  8. Garnish with crushed peanuts and serve.
