Ingredients

  • 2.5 kg lamb shoulder (cut into chunks)
  • 4 large potatoes (peeled & quartered)
  • 2 onions (peeled & quartered)
  • 1 whole garlic (cleaned)
  • 1 cup olive oil
  • 37.5 g salt
  • 7.5 g black pepper
  • 1 tsp ground cinnamon
  • 1 tsp ground cumin
  • 4 tomatoes (blended)

Instructions

  1. Preheat your oven to 180°C (fan-forced).
  2. In a baking dish, arrange the lamb shoulder, potatoes, onions, and garlic.
  3. Pour olive oil over the ingredients, then season with salt, pepper, cinnamon, and cumin. Mix well to coat everything evenly.
  4. Blend the tomatoes until smooth and pour over the lamb and vegetables, mixing again.
  5. Cover the dish with wet parchment paper followed by aluminum foil to keep moisture in.
  6. Bake for 4 hours until the lamb is fork-tender.
  7. Allow to rest for 10 minutes before serving hot.
