  • 1/2 cup unsalted butter
  • 1 cup all-purpose flour
  • 14 ounces full-fat sweetened condensed milk
  • 6 tablespoons lemon juice
  • 1 large egg yolk
  • 1 teaspoon cornstarch
  • 2 teaspoons lemon juice (or water)
  • 2 teaspoons granulated sugar
  • 1/4 cup granulated sugar
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 1 teaspoon lemon zest (1 lemon)
  • lemon slices
  • blueberries
  • leftover blueberry sauce
  • whipped cream

Instructions

  1. Prepare blueberry sauce by mixing cornstarch and lemon juice in a bowl. Heat blueberries and sugar in a saucepan until softened, then stir in the cornstarch mixture and cook until thickened.
  2. Preheat oven to 350°F (177°C).
  3. Make the crust by combining melted butter, sugar, vanilla extract, salt, and flour until you have a thick dough. Press into a tart pan.
  4. Bake the crust for about 15 minutes until lightly browned.
  5. In another bowl, mix filling ingredients and pour into the warm crust. Swirl in half of the blueberry sauce.
  6. Bake again for 17-19 minutes until set. Cool completely before chilling for at least two hours.
  7. Serve chilled with whipped cream and additional blueberry sauce.
