  • 3/4 cup crushed graham crackers
  • 2 Tbsp granulated sugar
  • 3 Tbsp salted butter (melted)
  • 2 1/2 Tbsp fresh lemon juice
  • 1 1/2 cups heavy cream
  • 12 oz cream cheese (softened)
  • 1 jar lemon curd (10 oz)

Instructions

  1. In a bowl, mix crushed graham crackers with sugar and melted butter. Divide into dessert cups and press down lightly.
  2. Combine lemon juice and water, sprinkle vegan gelatin on top, and let sit for 5 minutes.
  3. Whip heavy cream until soft peaks form; add a third of the powdered sugar.
  4. In another bowl, whip cream cheese until smooth; mix in lemon curd and remaining powdered sugar.
  5. Heat the gelatin mixture until dissolved; cool slightly before adding to the cream cheese mixture.
  6. Fold whipped cream into the cream cheese mixture gently until fully incorporated.
  7. Spoon mousse over the crust in dessert cups; refrigerate for at least two hours before serving.
