  • 1 lb potato gnocchi
  • 2 cups baby spinach
  • 1 cup cherry tomatoes (halved)
  • 3 garlic cloves (minced)
  • Zest and juice of 1 lemon
  • 1 cup chicken broth
  • ½ cup heavy cream
  • 1 tbsp olive oil
  • Salt and black pepper to taste

Instructions

  1. Slice the chicken into cubes and prepare the cherry tomatoes and gnocchi.
  2. Heat olive oil in a large skillet over medium heat. Season the chicken with salt and pepper, cooking until golden brown (5–7 minutes). Remove and set aside.
  3. In the same skillet, sauté minced garlic for 30 seconds, then add cherry tomatoes and cook for another 2 minutes.
  4. Pour in chicken broth, bringing it to a simmer. Lower heat, then stir in heavy cream, lemon zest, and juice (remove from heat briefly to prevent curdling).
  5. Add gnocchi and cook in the sauce until tender (3–4 minutes), then stir in spinach until wilted.
  6. Return chicken to skillet and mix well. Adjust seasoning as needed before serving.
