  • 1.5 pounds uncooked chicken breasts
  • 1 cup uncooked orzo
  • 6 cups chicken broth
  • 2 sticks celery (chopped)
  • 2 medium carrots (peeled & chopped)
  • 1/2 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice (or to taste)
  • Salt & pepper to taste

Instructions

  1. In a large soup pot, sauté celery, carrots, and onions in butter and olive oil over medium-high heat for 5–7 minutes until softened.
  2. Add garlic and cook for another 30 seconds. Stir in flour and cook for another minute.
  3. Pour in chicken broth, add Italian seasoning and chicken breasts; bring to a boil.
  4. Cover partially and simmer for 15 minutes.
  5. Stir in orzo and cook for an additional 10 minutes until tender.
  6. Remove chicken, chop it into pieces, return it to the pot along with lemon juice and parsley; season with salt and pepper before serving.
