  • 1 pound potato gnocchi
  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • Zest of 1 lemon
  • 1/4 cup freshly squeezed lemon juice
  • Salt and pepper to taste
  • 1 cup baby spinach
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook the gnocchi in a large pot of salted boiling water according to package instructions until they float. Drain and set aside.
  2. While the gnocchi cooks, season chicken breasts with salt and pepper. In a skillet, heat olive oil over medium heat and sauté the chicken for 6-7 minutes per side until golden brown. Remove from skillet and let rest before slicing.
  3. In the same skillet, add minced garlic and cook until fragrant (about 1 minute). Stir in heavy cream, lemon zest, lemon juice, red pepper flakes, salt, and pepper. Allow to simmer for 2-3 minutes.
  4. Add cooked gnocchi and baby spinach to the sauce; stir gently until well-coated. Cook until spinach wilts.
  5. Mix in grated Parmesan cheese until melted and creamy.
  6. Serve sliced chicken atop the gnocchi; garnish with fresh basil if desired.
