- 1 cup diced bell peppers (mixed colors)
- 1 cup sliced mushrooms
- 1 cup diced onions (yellow)
- 1 cup low-sugar tomato sauce
- 2 cups shredded cheese blend (mozzarella and cheddar)
- 2 tsp Italian seasoning
Instructions
- Preheat your oven to 375°F (190°C) and lightly spray an oven-safe baking dish with nonstick cooking spray.
- In a skillet over medium heat, brown the ground sausage until fully cooked; drain excess fat.
- Sauté the diced bell peppers, sliced mushrooms, and diced onions in the same skillet until softened, about 5 minutes.
- Transfer the sausage and veggie mixture to the prepared baking dish. Pour the low-sugar tomato sauce over it and sprinkle with Italian seasoning; top with shredded cheese.
