  • 1 cup diced bell peppers (mixed colors)
  • 1 cup sliced mushrooms
  • 1 cup diced onions (yellow)
  • 1 cup low-sugar tomato sauce
  • 2 cups shredded cheese blend (mozzarella and cheddar)
  • 2 tsp Italian seasoning

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly spray an oven-safe baking dish with nonstick cooking spray.
  2. In a skillet over medium heat, brown the ground sausage until fully cooked; drain excess fat.
  3. Sauté the diced bell peppers, sliced mushrooms, and diced onions in the same skillet until softened, about 5 minutes.
  4. Transfer the sausage and veggie mixture to the prepared baking dish. Pour the low-sugar tomato sauce over it and sprinkle with Italian seasoning; top with shredded cheese.
  5. Bake in the oven for 20-25 minutes until bubbly and golden brown.
