  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup Lucky Charms marshmallows

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. In a stand mixer, cream together softened butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract; mix until well combined.
  3. Gradually mix in flour, cornstarch, baking soda, baking powder, and salt just until no flour remains visible. Gently fold in Lucky Charms marshmallows.
  4. Using a cookie scoop, portion out dough onto the prepared baking sheet, leaving space between each ball.
  5. Bake for about 8 minutes or until lightly golden around the edges. Allow to cool on the sheet for 5-10 minutes before transferring to a cooling rack.
