  • 1 English cucumber, diced
  • 1 pint cherry tomatoes, halved
  • 2/3 cup kalamata olives, sliced
  • 4 ounces feta cheese, crumbled
  • 1/2 medium red onion, thinly sliced
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons red apple vinegar
  • 1 tablespoon freshly-squeezed lemon juice
  • 2 teaspoons dried oregano, minced
  • 1 teaspoon honey (or your desired sweetener)
  • 2 small garlic cloves, minced
  • 1/4 teaspoon freshly-cracked black pepper
  • 1/4 teaspoon salt
  • pinch of crushed red pepper flakes

Instructions

  1. Cook the pasta in salted boiling water until al dente; drain and rinse under cold water.
  2. Dice cucumber, halve tomatoes, and slice red onion while the pasta cooks.
  3. Whisk together dressing ingredients in a mixing bowl until smooth.
  4. Combine cooked pasta with vegetables and feta cheese in a large bowl; pour dressing over and toss gently.
