  • 2 cups corn kernels (fresh, canned, or frozen)
  • 2 cups cooked rice (white, jasmine, or basmati)
  • ½ cup sour cream (or Greek yogurt)
  • ¼ cup mayonnaise
  • Lime juice
  • Chili powder
  • Salt
  • Garlic powder
  • Optional toppings: cotija cheese, cilantro, jalapeños, avocado

Instructions

  1. Marinate the chicken: In a mixing bowl, combine olive oil, chili powder, cumin, garlic powder, salt, black pepper, lime juice, and cayenne (if using). Add chicken pieces and toss to coat. Let marinate for at least 10 minutes.
  2. Cook the chicken: Heat a skillet over medium-high heat with a splash of oil. Cook the marinated chicken for 5–6 minutes per side until browned and cooked through (165°F). Remove from heat.
  3. Prepare the corn: For fresh corn, grill whole cobs until charred; let cool before cutting off kernels. For canned corn, drain and sauté in olive oil until slightly browned. For frozen corn, thaw and sauté until golden.
  4. Make the street corn sauce: Mix sour cream, mayonnaise, lime juice, chili powder, and salt in a bowl until smooth.
  5. Assemble the bowls: Layer rice on the bottom of serving bowls followed by grilled corn and cooked chicken. Drizzle with street corn sauce and top with cotija cheese and cilantro.
