These bite-sized treats are perfect for any occasion, whether you’re hosting a dinner party or simply treating yourself. With their impressive presentation and easy preparation, these mini desserts will quickly become a favorite in your dessert repertoire. Each cheesecake features a buttery graham cracker crust, a smooth filling made from cream cheese and vanilla, and a crunchy burnt sugar topping that adds an irresistible contrast. Serve them chilled and topped with fresh berries or whipped cream for an extra touch of indulgence.

Ingredients

Scale
  • 1 cup graham cracker crumbs
  • 3 tablespoons melted butter
  • ½ cup granulated sugar (plus more for caramelizing)
  • 16 oz cream cheese, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup heavy cream

Instructions

  1. Preheat the oven to 325°F (163°C). Line a muffin tin with cupcake liners.
  2. In a bowl, mix graham cracker crumbs, melted butter, and sugar. Press into the bottom of each liner to form the crust and bake for 5 minutes.
  3. Beat together cream cheese and sugar until smooth. Add eggs one at a time, followed by vanilla and heavy cream; mix until combined.
  4. Pour cheesecake batter over crusts, filling each about three-quarters full. Bake for 18-20 minutes until set but slightly wobbly in the center.
  5. Cool to room temperature, then refrigerate for at least 2 hours.
  6. Sprinkle sugar on top of each cheesecake and use a kitchen torch to caramelize.
